Lemon Poppy Seed [French] Macarons

I love baking and something that I have been practicing is french macarons. It’s honestly the hardest cause you never know how it’ll turn out until its out of the oven. I am always on the edge of my seat when I make them, and that’s probably why I keep trying and trying. The main thing that shows I succeeded is when the macarons have the “feet” on them when baking. If you don’t already know the “feet” is the crinkly/bubbly/flaky looking thing that is around the bottom of the macaron.

I have been using the same recipe that I found from YouTube and it is very simple compared to some other recipes I’ve found. Now this time I wanted to add my own flare to it, so I decided to make some lemon poppy seed flavored macarons. All I did was add poppy seeds and some lemon zest (for the top of the macaron), BUT I made my own lemon cream recipe!

For the recipe you’re going to need everything that it says from the youtube video and your also just gonna add a

1/2 tsp. of poppy seeds

5-6 drops of yellow food coloring

Separate the eggs

With an electric mixer I’m going to whisk the egg whites. When it gets foamy I slowly add the sugar and then keep mixing until there are stiff peaks. You can also add the food coloring now.

In a separate bowl I added the dry ingredients by sifting it all in the bowl.

Now add the WET ingredients (egg whites) into the DRY ingredients (flour, powdered sugar, and poppy seeds).

This part is very crucial so DO NOT overmix but also DO NOT undermix. And mix it by slowly FOLDING the two mixtures together.

I piped it onto a sheet with parchment paper and tapped the bottom so the air would get out. I then let them out for about 15 minutes until they grew “skin” (which basically means that when you touch them it will not stick to your finger).

SO excited that there were “feet” on my macarons!

They came out pretty good! The only thing is that I added the lemon zest when the skin was not fully formed so when I took them out, the ones with a clump of zest were falling (as you can see in the picture).
